LUCY'S COOKIES
INGREDIENTS:
3 Cups whole wheat or brown rice flour
1/2 Cup powdered milk
3/4 Cup hot water, minus 1 TBS
1/3 Cup margarine
1 egg, beaten with a fork
1 TBS molasses
Pinch of salt
DIRECTIONS:
- Put margarine in a bowl and pour hot water in, stir until margarine is melted.
- Stir in the powdered milk, salt, molasses and the beaten egg and mix well.
- Slowly add flour, stirring until evenly moistened.
- Kneed mixture to form a stiff ball of dough. (If it's TOO stiff, moisten with another TBS of
molasses.)
- Roll out dough to a thickness of approximately 1/3 of an inch, and cut into bone or other
shape(s).
- Place on ungreased cookie sheets. Bisquits will not spread or rise, so they can be placed very
close together.
- Bake at 350 degrees for 40 minutes.
- Cool, then store bisquits in air-tight container or zip-loc. Keep in the refrigerator.
